The best thing I ate today is something that has become a staple in the rotation of our summer dinners - Greek Chicken. This is a modification of the Cooking Light recipe for Greek Style Pork Chops. I substitue chicken for pork and top it with a fresh medley of cucumbers, tomatoes and red onion. The garnish is a greek yogurt sauce made savory by the addition of dill. The dish is accompanied by toasted wheat pita, which is excellent for dipping into the yogurt. This is a fresh, satisfying end to a summer day, and never disappoints.
